[IPk] Fat and proteins

Without sounding too thick...Can anyone tell me what the effect of say a fat 
such as cheese would have on BG's, insulin requirements, etc? Same with a 
 protein, such as lean ham or chicken? (Eaten with some bread or other carb). As
say, we were told at pump start-up these things had an effect and needed to be 
counted, but not how. 
Any simple advice greatly appreciated.
