 Julian you may find that mashed potato (high GI) will raise your blood glucose
more quickly than for instance a jacket potato. Whereas new potatos may cause a
more gradual rise (low GI)It might also be that you cook chips in oil or use
oven chips that are coated in oil which may account for the later peak. It would
also be connected with what you eat with the potato which might have an effect
in slowing down the cho release.
