I have had an aversion to low-carb/diet icecream since I was a kid.  I
also find that the low fat icecreams contain even more sugar (if you
remove the fat, you have to put something in,  or it is whipped with air
to make it take up more volume).

I found that polydextrose is a fibre resistant to digestion and it can
help laxation (your bowels).  Therefore it shouldn't contribute much to
blood glucose.
