CaseyR. One good book is the John Walsh book PUMPING INSULIN THIRD Edition.  
This is a great book and a wonderful resource that talks a lot about what you 
are looking for.  The Doctor's Pocket Guide to Carbohydrates is another one 
that is good for carb counting.  Both these books can be bought through this
