Each high fat food affects different people at different times and it also
depends on how much of those foods you eat at one sitting.  Ditto for
protein.  Anything more than 3 oz is considered more than one serving.

You have to try dual waving or square waving for a fatty food and keeping a
lot as to how much insulin you took for it and over how long a period of
time and then check your b.g. to see if it works.  If not, next time you eat
THE SAME FOOD, then you try different numbers.  Once you get that number
down pat, make a notation somewhere prominant so you don't have to keep
going back to your log book and your b.g. should be ok.

Just my experiences with these foods.
