Mostly carbo for your breakfasts.  Why no protein & fruit serving?
Ever thought of TVP, vegetable protein sprinkled on cereal?  It can be
crunchies, or  softened in milk in bowl. (It softens quickly) There is no taste
to it, is protein packed.  Its carbo is 7.9 per 1/4 cup serving.  This may help
prevent an AM crash, or, try different carb/insulin ratio for breakfast.
