Prolonged fasting can stimulate the liver to breakdown stored glycogen to 
maintain a glucose supply to the system. Another reason for a post basal test 
spike may be the time of day when the fast ends: if it ends at a time of day 
when you are more insulin resistant, then the BG may spike because of that. 
Many people are normally insulin resistant in the am hours (YMMV).
