mostly meat and spuds in england...not to worry.

france...lots of salads and fish and veggies.

the only thing you should memorize is sauces.  just the bechamel sauces.
the rest will be butter type numbers and maybe some fruity ones.  you could
guess on those also.

as far as pastries...bring your carb book and think "krispy kreme".
