[IP] Glycemic Index (Ruth & Stephen)



	
Stephen,

There are two different scales used to rank glycemic indices of foods.  One
is relative to glucose (100) and one relative to white bread (100).  The
conversion factor is 1.4:  multiply indices relative to glucose by 1.4 and
you will get the numbers relative to white bread.  Some people feel that
using white bread as a reference makes it more meaningful.

The bottom line, I think, is not so much the actual #'s, as much as to eat
on the low to moderate ends of the GI scale, and to exercise care when
eating high GI foods.
