In "The Glucose Revolution" book it says some scientists use a 50g carb.
portion of white bread as a ref. since it is more typical of what we
eat.They give it a GI of 100 which makes some foods over 100 since they
enter the bloodstream faster than white bread.

But other scientists use glucose (100 GI) as the ref. which actually
makes white bread have a 70 GI. 

Boy, could that be more confusing?

I had to read that portion (pg. 30) several times to understand. This
particular book does use glucose as a ref.
