IIRC, some (2?) of the molecules on the sugar chain were reversed
so the body doesn't recognize it as sugar and doesn't metabolize

Their website says:
The sweetening ingredient in SPLENDA (sucralose) is not a
carbohydrate so it is not metabolized by the body. Thus, it
provides no calories.
SPLENDA is suitable for people with diabetes. Numerous studies
have shown that the sweetening ingredient in
SPLENDA, sucralose, is not recognized by the body as sugar or as
a carbohydrate. It is not metabolized by the body and does not
affect blood glucose levels. SPLENDA, or sucralose, has no effect
on carbohydrate metabolism or insulin secretion.

It is supposed to be made from sugar with no calories.  I have no
idea how this is done.
