Celiac Disease is an auto-immune disorder.  When gluten is ingested (or for
some even touched (lotions, shampoos) or inhaled (flour particles in the air
in a kitchen when someone is baking,))  the body produces an enzyme that
attacks the little filaments (villi) in the intestine, causing them to
harden and flatten.  These villi assist the body in absorbing nutrients from
the foods we eat.  Our gastro-entorologist best explained it by describing
normal intestines as looking like shag carpet when an untreated Celiac
patient's would look like linoleum flooring.  Since food just slides
through, symptoms can include cramping, diareahha, headaches, and in my
son's case "failure to thrive."  Gus's growth is about 11/2 years behind
where it should be based on bone age tests.  He's been on a gluten-free diet
since he was diagnosed and is symptom free and growing!...not as quickly as
he'd like and he may never reach his potential height, but at least he'll be
average.
