I don't know of any specific publication out there but a great place to
start is 
the "Exchange Lists for Meal Planning".  It is published by the American
Diabetes Association and the American Dietetic Association.  It breaks
foods out into the different exchanges and then tells you how many carbs 
are in an exchange.  It was a great place for me to start.  But the  best
is to see a dietician.  She really directed me in the right path.  With carb

counting and what my ratios were.  That and I carried around a set of
measuring cups when I started to measure things.  Now I can eyeball a lot
of stuff.  
What might help is to tell us what your 10-12 year old is having problems 
with.  Knowing what carbs are in things or actually calculating it into the
ratios, or the whole concept.
