I am not a vegan, but I eat no beef, some chicken/turkey type meats and
fish, lots of beans, rice, tofu and veggies of all kinds.  I do drink fat
free milk, and can't live without Tillamook Extra Sharp Cheddar
Cheese....actually love all cheeses, but that one is my weakness. I eat
almost no fat - in fact last year when I checked in with the dietitian, she
said, you need to add some fat to your diet--and I have been overweight
since I was born - so I get to have a few tablespoons of peanut butter, joy
or joy, every few days.  This had made a positive result on my bgs,
cholesterol levels, etc.

What do your lipids run on this kind of diet?  Cholesterol levels?  How
fat are you eating?  My concern is the risk for heart disease with
fat in the diet. I'd be interested in hearing more abut this diet.
