We have a son, Gus-7, diagnosed with DM 10/98 and Celiac Sprue a week later.
There are lots of good prepared GF foods available.  Call Dietary
Specialties for a catalogue (best prepared pizza, lasagne, and pound cake
we've found,)
1-888-MENU123.  The Celiac Sprue Association of America produces a
Commercial Products Listing/catalogue that is really helpful! (402)558-0600
or Fax 402-558-1377.  A good health food market will stock GF cereals,
breads (best to make your own...) soy sauce and pasta (again, best to make
your own, but there are some good oriental rice pastas and lentil pastas.)

Lastly, you need to get any of Bette Hagman's GF cookbooks if you don't
already have them.  Wheat-free Cooking by Phyllis Potts is also good for GF
recipes.

We eat a lot of mexican food (cocrn, rice, and beans!)

Yesterday I responded to someone who knows someone with Celiac Disease about
our experimentation with MacroBiotics.  The MB diet is largely GF and relies
on COMPLEX carbohydrates making it perfect for a diabetic.  Gus's BGs were
remarkably even and normal while we were eating a strict macro diet.  We're
more flexible now...add organic chicken and white fish every so often, and
GF baking relies on eggs....  Good luck!
